Mask typically refers to a pattern of bits that is then ANDed or ORed with a number to remove or pass certain bits.

Code:
  10101010   original
  00001111   mask

00001010  result of orignal AND mask
10101111  result of orignal OR mask
10100101  result of original Exclusive OR mask

In the 68000 we also refer to an interrupt mask which is a way to block lower level interrupts.
